Our Cheeses

Every fine cheese, regardless of its type, has subtle nuances of flavor, aroma, color and texture that set it apart from all other members of its family. The same is true for the cheeses of Milton Creamery. Prairie Breeze, for instance, is characterized as a sweet hybrid alpine cheddar. Yet it has nutty tones that distinguish it from all other cheddars. Prairie Rose and Prairie Dawn follow suite, with delicate shadings that make them stand out from their respective varieties.

... they “squeak” for themselves! Instead of being pressed into a block like our aged cheese, they are weighed into bags. The fresh curds have a short shelf life. They can be kept at room temperature up to 4 days, refrigerated 2 weeks or more, or frozen for an extended period of time. Curds should be eaten at room temperature or warmer to get the milky flavor and squeakiness. They can be microwaved a few seconds.
